Avocado Brownies

Ingredients
- 1 cup chopped chocolate
- 2 ripe avocado
- 1 tsp. liquid stevia
- 2 tsp. vanilla extract
- 4 eggs
- 1 cup ground almonds
- ½ cup cocoa powder
- ¼ tsp. salt
Directions
- Preheat oven to 350˚ F. Prepare an 8-inch baking pan by lining it with foil and then coating with non-stick cooking spray.
- Add chocolate to a bowl and place over a large saucepan of boiling water. Stir until chocolate is melted. Remove from heat and let cool.
- Meanwhile, make the batter: in a bowl, mash the avocados; add stevia and stir to combine. Whisk in vanilla extract and eggs until well-blended.
- Gradually whisk in the chocolate until well incorporated.
- Stir in ground almonds, cocoa powder, and salt until well blended.
- Transfer the batter to the prepared baking pan and bake for about 30 minutes or until a tester inserted in the center comes out clean.
- Remove from oven and let cool completely before cutting into squares.
- These brownies are best served chilled.
