Delicious Coconut Flour Brownies

Yield: 16 Brownies
Total Time: 40 Minutes
Prep Time: 10 Minutes
Cook Time: 30 Minutes

Ingredients

  • ½ cup organic coconut oil
  • 3 large eggs
  • 1 tsp. vanilla extract
  • ½ cup raw honey
  • ¼ cup cocoa powder
  • ½ cup coconut flour
  • ½ tsp. kosher salt
  • ⅓ cup mini chocolate chips
  • ⅓ cup chopped raw walnuts

Directions

  • Preheat oven to 300˚F. Prepare an 8×8- inch glass baking pan by lining it with parchment, leaving two edges to hang over the side of the pan.
  • Coat with non-stick cooking spray.
  • Add coconut oil to a glass cup and microwave until melted.
  • In a bowl, whisk eggs and melted coconut oil until blended.
  • Whisk in vanilla extract and raw honey until well combined.
  • Whisk in salt and coconut flour until well-blended and then fold in chocolate chips and nuts.
  • Spread batter in the pan and bake for about 30 minutes or until a tester inserted in the center comes out clean.
  • Remove from oven and let cool completely before cutting into 16 equal squares.
