Roasted Vegetables
Serves 2
Ingredients
- 100g mushrooms
- 2 courgettes
- 1 packet of cherry tomatoes
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 1 clove of garlic (optional)
- 1 tbsp coconut oil
Method
- 1. Slice and dice all vegetables
- 2. Mince the garlic
- 3. Add all the ingredients to a wide bottomed baking tray and mix really well
- 4. Cook in the oven at 200* for 20-25 minutes beef casserole
