Roasted Vegetables

Serves 2

Ingredients

  • 100g mushrooms
  • 2 courgettes
  • 1 packet of cherry tomatoes
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 1 clove of garlic (optional)
  • 1 tbsp coconut oil

Method

  • 1. Slice and dice all vegetables
  • 2. Mince the garlic
  • 3. Add all the ingredients to a wide bottomed baking tray and mix really well
  • 4. Cook in the oven at 200* for 20-25 minutes beef casserole
