Beef Casserole

Serves 5

Ingredients

  • 750grams braising steak
  • 2 cups of sliced mushrooms
  • 6 tbsp tomato puree
  • 3 leeks
  • 2 carrot
  • 1½ red onions
  • 4 clove of garlic crushed
  • 3-4 tbsp worcester sauce
  • 2 tbsp coconut oil
  • 1400 ml gluten free beef stock cube

Method

  • Heat the coconut oil in a large pan and add the onions, carrots, leeks, mushrooms and garlic and cook for 5-7 minutes until soft
  • Add the beef slowly until brown
  • Add the stock and puree then simmer
  • Cook for 1 – 1.5 hours and serve with vegetables of choice
