CHRISTMAS STARTERS

Perfect Christmas Salad

Yield: 6 Servings
Total Time: 10 Minutes
Prep Time: 10 Minutes
Cook Time: N/A

Ingredients

Salad

  • 1 large red apple, finely diced
  • 1 cup small cauliflower florets
  • 350g snow peas, julienned
  • 4 small sweet red peppers, julienned
  • 1 small kohlrabi, julienned
  • 1 fennel bulb, shaved paper thin
  • ½ cup raw pecans, toasted
  • ½ cup raisins
  • 1 tbsp. fresh sage, chopped
  • 1 tbsp. fresh thyme, chopped

Dressing

  • ½ cup avocado oil
  • ¼ cup applesauce
  • ¼ cup white balsamic vinegar
  • 2 cloves garlic, minced
  • ¼ tsp grated nutmeg
  • ¼ tsp ground ginger
  • ½ tsp ground cinnamon
  • 1 tsp black pepper
  • 1½ tsp salt

Directions

  • Combine all salad ingredients in a large mixing bowl.
  • Combine all dressing ingredients in a blender and blend until very smooth
  • Pour the dressing over the salad and toss until well coated. Serve right away.

CHRISTMAS MAIN

Perfectly Lemon & Herb Roast Chicken

Yield: 4 Servings
Total Time: 1 Hour 30 Minutes
Prep Time: 10 Minutes
Cook Time: 1 Hour 20 Minutes

Ingredients

  • 5 pounds whole chicken
  • 2 tbsp. extra-virgin olive oil
  • 2 medium red onions, chopped
  • 2 sticks of celery, chopped
  • 3 medium potatoes, diced
  • 2 carrots, chopped
  • 10 garlic cloves, unpeeled
  • 1 lemon
  • 1 cup chopped mixed fresh herbs (rosemary, bay, thyme)

Directions

  • Preheat your oven to 475°F.
  • Mix all vegetables, herbs and garlic cloves in a roasting pan; pile them in the center and drizzle with olive oil. Drizzle the chicken with oil and sprinkle with salt and pepper; rub the seasoning all over the chicken and place it over the veggies.
  • Prick the lemon all over with a sharp knife and place it inside the bird’s cavity alongside a handful of herbs.
    Reduce the heat of the oven to 400°F and roast the chicken for 1 hour 20 minutes, basting it halfway through cooking. Remove the chicken from oven and place it on chopping board to rest for at least 15 minutes.
    Carve the chicken and serve with the roasted veggies drizzled with the piping hot gravy. Enjoy!

CHRISTMAS SIDE DISH

Garlic & Fennel Roast Potatoes

Yield: 8 Servings
Total Time: 1 Hour 5 Minutes
Prep Time: 40 Minutes
Cook Time: 25 Minutes

Ingredients

  • 5kg (12) desiree potatoes, halved
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tbsp. fennel seeds, ground
  • 4 garlic cloves, minced

Directions

  • Preheat your oven to 400°F. Prepare a baking tray by lining it with baking paper and set aside.
  • In a saucepan, heat oil and sauté fennel and garlic for about 1 minute or until fragrant; remove from heat and set side, covered, for flavors to blend.
  • In the meantime, boil potatoes in a large sauce of salted water for about 15 minutes or until tender; drain and toss in coriander until well coated.
  • Transfer the potatoes to the baking tray and strain the oil mixture over. Discard fennels seeds and garlic and toss to coat well; roast the potatoes for about 50 minutes or until tender and golden. Serve with roast chicken.

CHRISTMAS DESSERTS

Perfect Chilli Chocolate Christmas Mousse

Yield: 6 Servings
Total Time: 10 Minutes + Chilling Time
Prep Time: 10 Minutes
Cook Time: N/A

Ingredients

  • 2 bananas, chopped
  • 1 large avocado, diced
  • 6 tbsp. raw cacao powder
  • 1 tsp. vanilla extract
  • 5 tbsp. coconut cream
  • 2 + 1/2 tbsp.raw honey
  • Pinch of sea salt
  • 3/4 tsp. red chilli flakes
  • Garnishes: raspberries, dark chocolate flakes, and chilli flakes

Directions

  • In a blender, blend together the chopped bananas, avocado and cacao powder until very smooth; transfer to a large bowl and stir in vanilla, coconut cream and raw honey until well blended.
  • Stir in chili flakes and salt until well combined and refrigerate for about 3 hours before serving.
  • To serve, garnish with raspberries, dark chocolate flakes and a sprinkle of chili flakes.

Delicious Christmas Mince Pies

Yield: 16 Servings
Total Time: 1 Hour 42 Minutes
Prep Time: 1 Hour 30 Minutes
Cook Time: 12 Minutes

Ingredients

  • ½ cup coconut flour
  • 5 cups almond flour
  • 8 tsp. coconut oil
  • ½ tsp. baking soda
  • ½ tsp. sea salt
  • 2 tbsp. fresh orange zest
  • 1 tbsp. coconut palm sugar
  • 1 egg, lightly whisked
  • 1 ½ cup mincemeat

Directions

  • In a large bowl, soft together coconut, flour, almond flour, baking soda, sugar and sea salt until well combined; stir in orange zest. Add in melted coconut oil and stir to mix well. Stir in egg until soft dough is formed.
  • Wrap the dough in film and chill in the fridge for at least 1 hour.
  • When ready, preheat your oven to 350°F. Generously grease the muffin pan with melted coconut oil.
  • Place the dough between two baking sheets and roll with a rolling pin to pie-crust thin. With a cookie cutter, cut 64 circles and press 32 circles into the muffin molds.
  • Fill each mold with a teaspoon of mincemeat and top with the remaining 32 circles, using water as glue on the rim.
  • Bake in the oven for about 12 minutes or until cooked through and golden.
  • Remove from oven and let cool completely before serving.
