Greek Pasta Salad

Serves 3

Ingredients

  • 2 cups Gluten Free penne pasta (or pasta of choice)
  • 1 cup Kalamata Olives, pitted
  • 1 punnet Cherry Tomatoes, halved
  • 1 tsp Dried Oregano
  • 2 Tbs Olive Oil
  • 2 Tbs Lemon Juice
  • 100g Fetta, cubed
  • 1 Lebanese Cucumber, diced
  • Sea Salt & Pepper, to season

Directions

  • Cook Pasta according to packet instructions, set aside to cool.
  • Mix all the ingredients together in a large serving bowl, adding Fetta andOregano last.
  • Season with Sea Salt & Pepper, and serve.
