Ingredients
- 8 eggs, whisked
- Coconut oil to grease pan
- 4 tomatoes, diced
- 1 teaspoon red pepper flakes
- 2 garlic cloves, minced
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh dill
- Salt and pepper
Directions
- Preheat your oven to 325°F.
- Spray a cast iron skillet or saucepan with olive oil spray.
- In a bowl, whisk together eggs and the remaining ingredients until well blended.
- Pour the mixture into the pan and bake for about 30 minutes or until cooked through.
- To serve, garnish with extra chives and dill.
